My sister recently asked for my mom's recipe for thumbprint cookies and I thought I'd share it with all of you in case you enjoy baking.....or even have the time for it! Anyway, they are awesome and you can fill the cookies with different colored icing for different holidays such as Christmas, Easter, or any holiday you want! You can also use a jam in them which my sister-in-law does and it's really yummy. Enjoy!
Thumb Print Cookies
1 cup butter softened
2 cups flour
1/2 cup sugar
2 egg yolks beaten
2 egg whites
1 tsp vanilla
1 tsp salt
2 cups crushed pecans or walnuts
Cream butter and sugar together with electric mixer. Beat in egg yolks and vanilla. Blend in flour and salt. Shape into 1 inch balls with hands and dip in egg whites. Roll in crushed nuts. Place on ungreased cookie sheet and dent centers with thumb or finger. Bake at 350 for 5 min, remove and dent again. Bake an additional 10 min then remove to cool. Fill with buttercream frosting.
Buttercream Frosting
1/2 cup crisco
1/2 cup butter or margarine (I like using blue bonnet sticks)
1 tsp vanilla (clear if you have it)
4 cups powdered sugar
2 Tbsp milk
Combine crisco, butter, and vanilla with electric mixer. Then add sugar slowly. You can sift sugar if you like to make a smoother icing. Add milk to thin icing at the end. Then you can color your icing different colors to make pretty cookies everyone will love!
